Starch can be hydrolyzed by amylolytic enzymes producing smaller products, such as oligosaccharides, dextrins, and glucose. Amylolytic enzymes have been classified into several glycoside hydrolase (GH) families, namely a-amylase (family GH13), B-amylase (family GH14), and glucoamylase (family 15). The aims of the research were to characterize and crystallize two amylolytic enzymes from Saccharomycopsis fibuligera R64.
