Kualitas dan keamanan pangan telah lama menjadi isu penting dalam industri pangan. Good Manufacturing Practices (GMP) kemudian berkembang sebagai persyaratan dasar untuk memenuhi keamanan pangan. Sementara itu, standar produk secara luas menjadi acuan kualitas suatu produk dalam perdagangan internasional. Industri kecil dan menengah (IKM), dengan berbagai keterbatasannya, menghadapi lebih banyak kesulitan dalam memenuhi persyaratan kualitas dan keamanan pangan.

Penelitian ini menggunakan metode Quality Function Deployment (QFD) untuk menghubungkan elemen-elemen GMP dan parameter-parameter dalam standar produk dengan tujuan mengidentifikasi pengaruh GMP terhadap pemenuhan standar produk. Sebagai studi kasus, model QFD diterapkan pada industri tahu di Indonesia. Selain menganalisa standar tahu di Indonesia, penelitian ini juga mempertimbangkan standar tahu lainnya sebagai masukan, yaitu standar Codex Alimentarius Commission (CAC) dan standar tahu Taiwan.

Hasil penelitian menunjukkan elemen-elemen GMP yang paling berpengaruh terhadap pemenuhan standar tahu adalah Product Contamination Control, Water Quality, dan Cleaning and Disinfection. Selanjutnya, analisa lanjutan antara elemen-elemen GMP dan tindakan-tindakan perbaikan melalui model QFD mengidentifikasi Waste Treatment Facility Improvement, On Site Mentoring by GMP Expert, dan Technical or Food Safety Training for Personnel sebagai tindakan-tindakan perbaikan yang paling berpengaruh terhadap pemenuhan GMP.

Deskripsi Alternatif :

Food quality and safety have become important topic in food industry for decades. Good Manufacturing Practices (GMP) is developed as basic requirements to achieve food safety. Meanwhile, product standards are widely used as reference for product quality in global trading. Small and medium industry (SMI) with its natural limitations has more difficulties to comply food quality and safety standard.

In this research, Quality Function Deployment (QFD) is used to link GMP elements and product standard parameters in order to identify GMP influence on product standard compliance. As a case study, tofu industry in Indonesia is examined. Some inputs from Codex Alimentarius Commission (CAC) and Taiwan tofu standard are considered.

Results show that the most influential GMP elements in order to comply tofu standard are Product Contamination Control, Water Quality, and Cleaning and Disinfection. Furthermore, extended deployment of GMP elements into common improvement actions with QFD model identifies the most influential improvement actions in GMP compliance which are Waste Treatment Facility Improvement, On Site Mentoring by GMP Expert, and Technical or Food Safety Training for Personnel.
